Brief Job Description

The Head Chef is a key member of the management team and is responsible for all food preparation at the club including the restaurant, bar and on-course outlets.

Compensation: Up to $45,000

Qualifications, Knowledge and Skill Requirements:

  • Supervise and participate in the preparation of all food items ranging from casual, quick pick up, to fine dining
  • Recruit, train, and supervise kitchen and service staff
  • Promote and create service standards and culture throughout food & beverage department
  • Evaluate food products to assure that quality standards are consistently achieved
  • Improve and regularly change menu selection to ensure that all restaurants have a variety of attractive options
  • Create menus for all public and private functions at the club, customizing menus as needed
  • Forecast, budget, and create action plans pertaining to kitchen operations
  • Ensure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas
  • Maintain kitchen equipment by following appropriate operating guidelines, troubleshoot breakdowns and perform preventative maintenance
  • Institute and implement all Troon Human Resources guidelines
  • Full compliance with the Department of Health regulations
  • Perform clean-up and closing procedures
  • Perform other duties as assigned

Responsibilities:

  • Must have 3 years of related experience in Culinary & Leadership
  • College degree preferred
  • Must be proficient in the use of Microsoft Word, Excel, Outlook, and PowerPoint
  • Knowledge of pertinent health regulations and liquor laws
  • Must have food and beverage/ a la carte and banquet experience
  • Must have proven management experience
  • Must have strong business aptitude
  • Must have strong service orientation
  • Must possess excellent written and verbal communication skills
  • Must be highly organized, efficient, and detail-oriented
  • Must have exceptional interpersonal skills
