Brief Job Description

Responsible for all food operations in a way that exceeds the expectations of our guests by providing excellent products and services. Ensures the highest level of organization and execution as a top priority. Supervises all food production staff to provide high food quality, presentation, sanitation, and cost standards are consistently attained. 

Candidate Qualifications

  • An organized and detail-oriented person, resourceful, enthusiastic and a flexible self-starter, sensitive to the service nature of the position.
  • Demonstrate a high level of integrity, a positive attitude and professional image.
  • Must be a customer-oriented team player, with a creative approach to the position, a strong level of initiative, maturity, and ability to improve kitchen processes and services.  
  • Coordinate, manage and participate in all food production for breakfasts, lunches, dinners, caterings, club functions, and special events.
  • Promotes a culture of a friendly and professional environment that encourages a healthy work/life balance.
  • Plans and maintains effective menus for daily operations, groups, and special events based on demand and guests’ preferences or dietary needs. Meets with potential clients to develop options and pricing.
  • Develop techniques for food preparation and presentation which insures the consistent highest standards of quality and minimizes food costs.
  • Perform all duties associated with working “the line” during lunch, dinner and at special functions; cook all food requiring skillful preparation and presentation.
  • Establish portion control and pricing; estimate food consumption based on appropriate serving sizes to reduce waste, cost, and inventory.
  • Order all food and provisions from various purveyors, ensuring high quality at optimum cost and regularly conduct comparisons between suppliers and vendors.
  • Receive and check food orders for quality and accuracy; evaluate food products to assure that quality standards are achieved and consistently followed.
  • Ensure proper staffing of kitchen for productivity and high standards of quality; control food and payroll costs to achieve maximum profitability.
  • Evaluate condition and routine repair/upkeep of kitchen equipment and facilities and make any major repair or maintenance needs known to Director of Golf.
  • Knowledge of proper sanitation procedures as required by the Colorado Health Department, thereby, passing all routine inspections.
  • Establish and maintain professional standards of conduct and appearance for all kitchen staff.
  • Lead trainings, meetings, and professional development opportunities for all kitchen staff.
  • Regularly visit all food outlets to welcome and request feedback with guests.
  • Prepare necessary data for applicable parts of the budget, annual projection of food/labor cost; take corrective action necessary to assure that financial goals are met.
  • Collaborate with the Director of Golf on how to improve the dining experience, pushing the Club to a higher standard.
  • Maintain Club hours of operation throughout season and during special events.

Educational Requirements

  • Bachelors degree preferred
  • Certified Food Protection Manager required.
  • Certification from the American Culinary Association or other professional hospitality association preferred.
