The Links at Fisher Island features manicured paspalum supreme grass, laser-leveled tees, and strategically-placed bunkers. The course is designed to create the most memorable time on the links; each hole is distinctive, and several holes play around sculpted bunkers or over lagoons and lakes. One of the most fascinating holes is the 390-yard, par-4 seventh that plays along Miami’s shipping channel where yachts and cruise ships sail.Ranked in the Top Ten 9 hole courses in the nation by Golf Digest’s Ron Whitten, this scenic seaside course has played host to a number of nationally-televised PGA and Senior Tour shoot-outs. “Golf lovers have 18 holes of design features in 9 holes,” says P.B. The Racquet Club features play on 17 tennis courts and 4 pickleball courts. There are four types of tennis playing surfaces (including all 4 "Grand Slam" surfaces): 2 grass courts, 5 European red clay courts, 3 hard courts and 7 Har-Tru courts, with nighttime lighting, all surrounded by lush green hedging that ensures complete privacy, inviting members and guests to play day or night.A centre court with stepped up viewing area sets the stage for memorable tournaments that often host featured tennis stars. The original Vanderbilt Mansion now serves as the landmark centerpiece of the 15 luxury accommodations. The original property is composed of the mansion, pumphouse / Beach Club tower, Rosamund's Studio, Rosemary's Cottage, North & South Cottages, Guesthouse Suites, Vanderbilt Theater, and the airplane hangar (now Spa Internazionale).

Brief Job Description

​Assure a high standard of appearance, hospitality, and service in personnel and cleanliness of the dining room. Ensure timeliness of foodservice. Supervise and train dining room staff.  Develop and implement programs to increase member satisfaction and employee engagement. 

  • Designs floor plans according to reservations.
  • Plans dining room set-up based on anticipated guest counts and client needs.
  • Takes reservations, checks table reservation schedules, and maintains reservations log.
  • Greets and seats members and guests.
  • Inspects dining room employees to ensure that they are in proper and clean uniforms at all times.
  • Hires, trains, supervises, schedules, and evaluates dining room staff.
  • Confirms time, attendance and hours worked and approves weekly departmental payroll prior to submitting it to the Payroll Office.
  • Produces daily or meal-period revenue analyses and other reports from point-of-sale (POS) systems used in the dining room.
  • Performs daily POS closeout and service charge distribution requirements (if applicable). Verifies proper distribution of service charges for employees and submits to Payroll.
  • Provides appropriate reports concerning employee hours, schedules, pay rates, job changes, etc.
  • Receives and resolves complaints concerning dining room service.
  • Serves as liaison between the dining room and kitchen staff.
  • Assures that all side-work is accomplished and that all cleaning of equipment and storage areas is completed according to schedule.
  • Directs pre-meal meetings with dining room personnel; relays pertinent information such as house count and menu changes, special member requests, etc.
  • Assures the correct appearance, cleanliness, and safety of dining room areas, equipment, and fixtures; checks the maintenance of all equipment in the dining room and reports deficiencies and maintenance concerns.
  • Makes suggestions about improvements in dining room service procedures and layout.
  • Trains staff on all aspects of the POS system.
  • Develops and supervises the revenue control system.
  • Assures that the dining room and other club areas are secure at the end of the business day.
  • Maintains an inventory of dining room items including silverware, coffee pots, water pitchers, glassware, flatware and china, salt and pepper holders, sugar bowls and linen and ensures that they are properly stored and accounted for.
  • Develops and maintains the dining room reservation system.
  • Develops and implements an ongoing marketing program to increase dining room business.
  • Monitors dining room labor and supplies budget; adjusts to achieve financial goals.
  • Utilizes computer to accurately charge members, create forecast and revenue reports, and write correspondence.
  • Develops and continually updates and refines policy and procedure manuals for service staff to increase quality and control costs.
  • Assists in service and tableside cookery, as needed.
  • Attends scheduled staff meetings.
  • Plans operating budget for dining service responsibilities.
  • May serve as the club’s opening and closing manager or manager on duty.
  • Works with Restaurant Chef to update, review, and print weekly menu changes.
  • Assists in developing wine lists and beverage promotions.
  • Tracks wine sales.
  • Assures that local and state laws and the club’s policies and procedures for the service of alcoholic beverages are consistently followed.
  • Performs other appropriate assignments and projects as required by the Director of Culinary and Food and Beverage.
  • Exercise discretion and independent judgment in the completion of job duties related to matters of significance

Candidate Qualifications

  • Demonstrated knowledge and proficiency in restaurant technologies
  • Proficient knowledge of wine and wine service (all regions)
  • The ability to interact with members and guests as well as oversee all administrative functions as it relates to Club-related matters
  • “Whatever it takes” attitude and the ability to work as a member of a team of professional staff members 

Educational Requirements

  • Bachelor’s degree in Hospitality Management  or a related discipline is preferred
  • 5 years of proven work experience as a Restaurant Manager (independent or corporate) or similar role
