This summer we closed the course from Memorial Day through Mid August to reseed and grow in many parts of our greens that received some winter damage.

We have a main lodge that serves three meals a day seven days a week. Poolside cabana serving F&B seasonally. Eagles Nest is the name of our turn house. This a three story structure perched over 90 feet on a bluff overlooking our championship golf course. Two distinct indoors dining areas and two large patios outside with a 10,000 square foot putting green. This is currently under construction and plan to open mid June.

Campus-wide management and leadership for the service elements of the Ranch’s food and beverage operations. Ensures the quality of service and products to our members and guests is outstanding and memorable. Maintains a high standard of cleanliness and facilities maintenance in the Lodge and other F&B outlets. Ensures proper accounting of sales, product transfers, employee scheduling and payroll. Provides continuous and ongoing training and leadership to service team members in the Clubhouse restaurants/bars, Eagles Nest, Employee Kitchen and all event spaces. Works closely with and is the supervisor of  the F&B Managers( 3), Executive Chef, Event team, and works as a team player with all other department managers and all associates of the ranch.

• Pre-employment background check and drug screenings are required. ESSENTIAL FUNCTIONS

• Actively participates in Lodge and event operations providing continuous direction and training for all staff, ensuring service standards are met consistently.

• Adheres to proper uniform and grooming standards. Ensures all F&B staff follow established uniform and grooming standards and policies.

• Adheres to and enforces company policies and procedures.

• Works to develop department SOP’s.

• Communicates to staff all pertinent information, including special events, policies and guidelines, human resources topics and other related subject matter.

• Assures scheduled staff is present, knowledgeable in that day's duties, menus, special food offerings, Ranch special events and calendared activities.

• Holds staff members accountable for performing their duties in accordance with established standards for Big Easy Ranch.

• Ensures timely and complete opening and closing duties are accomplished.

• Establishes a standard of timely and cooperative communication between all departments and Food and Beverage staff.

• Reports all non-working equipment, damaged furniture or facility repair needs to the Maintenance Department in a timely manner.

• Provides timely member menu feedback to the culinary department and leadership.

• Responsible for creation and implementation of a consistent training agenda for all F&B staff and maintains accurate training records.

• Responsible for payroll and labor controls to achieve budgeted goals for all depts.

• Ensures time keeping corrections and approvals are accurate and timely.

• Keeps records, communicates effectively and takes appropriate action to enhance the dining experience in all outlets and event spaces.

• Oversees the Employee Kitchen along with the clubs Executive Chef( Collaborates with the HR department) for special Employee events to enhance the “internal guest” experience.

• Will participate in annual budget preparations.

• Responsible for the timely completion of employee evaluations and related personnel paperwork.

• Oversees the ordering and maintenance of par levels for beverages and other inventory. Responsible for ordering and receiving all beer and liquor for banquet events, as per the BEO.

• Oversees equipment inventory and ensures all assets are counted as directed.

• Ensures that all service associates are compliant with TABC certifications and training.

• Oversees the set up and breakdown of special events in all dining and event areas, on and off property.

• Works on the floor and or behind the bar to help cover gaps in service, to serve our Members and to support a reduction in hourly staff as business levels fluctuate, so will service staffing needs.

• Coordinates and organizes temporary staffing when applicable.

• Works in partnership with the wine department staff for promotions, service, development and promotion of the wine program.

• Works to develop special beer, wine and liquor programs; trains and educates team members on the Lodge’s beverage operations.

• Coaches and Develops the Executive Chef to perform at a higher level as a manager and leader of the culinary operation.

• Constantly seeks and implements ideas representative of industry best practices.

• Is responsible for the oversight and maintenance of the P.O.S. for accuracy, server efficiency, front/back communication and interface with accounting programs.

• Conducts and participates in the weekly Department Manager’s meeting and other special event meetings.

• Physically conducts monthly inventory for the F&B department with managers.

• Responsible for all promotional and marketing information for E-blast, member newsletter and website.

• Works and communicates effectively with all other departments of the operation.

Candidate Qualifications

KNOWLEDGE/SKILLS/ABILITIES • 2-3 years of Clubhouse hospitality service industry experience is required.

• Minimum of Associate’s degree required, with a Bachelor’s degree preferred.

• CMAA membership and previous experience working in a private Club is helpful and considered highly desirable.

• Required food service certifications must be obtained and maintained.
