Executive Sous Chef
Job Description
Oversees all Restaurant kitchen operations, ensuring quality, cost control, and compliance with Japanese regulations, while managing staff, HR, member relations, and finances.
• Ensure positive member experiences, understand member preferences, and support Executive Chef with member needs.
• Supervise staff, maintain communication, oversee training, scheduling, and performance.
• Maintain food standards & hygiene, menus, recipes, and recommend improvements.
• Control food, labor and inventory costs, monitor budgets and revenue.
• Follow grooming, uniform, and legal/health regulations, with flexible work schedule.
• Drive innovation for new ideas and ways of smarter work processes.
Candidate Qualifications
• Over ten years of progressive culinary experience, including management-level roles, with strong expertise in Western, American, and Asian cuisines.
• Preferable knowledge of Japanese laws and regulations related to food safety, hygiene, allergy prevention, and overall food production, as well as familiarity with ServSafe standards.
• Understanding of religious and other dietary requirements and preferences to ensure inclusive menu planning.
• Strong organizational, leadership, communication skills, flexibility, and ability to forecast and plan ahead.
Educational Requirements
A degree or diploma from a culinary school is preferred.
