DIRECTOR OF FOOD & BEVERAGE

Brief Job Description

The Director of Food & Beverage (F&B) is responsible for all food & beverage service operations daily, including its activities, dining options, beverage options, and interactions between customers, coworkers, and vendors. Being a dynamic hands-on leader that is comfortable being the face-of, and point-of-contact for the department is essential. Constantly engaging with and working with the departmental coworkers is critical to the success in this position.  The director will ensure that excellent dining and other food and beverage experiences are provided for our members and their guests.  This position reports to the General Manager.

  • Executive Chef in collaboration with General Manager
  • F&B Events Manager (catering, events, and youth playroom)
  • F&B Assistant Manager
  • Founders Grill Manager

KEY RESPONSIBILITIES/ESSENTIAL DUTIES

  • Work closely with the Executive Chef/Department Managers/General Manager and all Department Heads to facilitate the food and beverage facets for the Club
  • Be the primary coordinator of food and beverage hiring, coaching, training, and orientations
  • Create a culture of teamwork, and supervise coworkers to ensure all responsibilities are completed per approved Club policies, expectations, and governmental regulations
  • Be an active and dynamic recruiter of team members and someone who inherently enjoys developing and building his/her team and leading them to significant, positive membership satisfaction
  • Conduct and/or oversee training programs and meetings for food service team on various issues including service techniques, knowledge of menu items and specials, sanitation, team building, conflict resolution, and relevant departmental information. Regularly test/evaluate knowledge and understanding of these expectations
  • Be a collaborative team player who is willing to be hands-on when necessary but understands when to delegate
  • Ensure that an effective orientation and onboarding program exists in all areas of responsibility, along with consistent professional development and training
  • Have a strong, highly visible, and respectful presence with the membership
  • Be an exceptional communicator, have encouraging interpersonal skills, and the experience of how to treat members, guests, coworkers, and vendors with a high-level of professional service
  • Recommend, adopt, monitor, and manage policies, standard operating procedures, and staffing for all Food & Beverage areas
    • Be a focused and consistent evaluator of personnel, ensuring that these standards are met; including members, guests, and coworkers
    • Implement high standards of appearance, hospitality, and service
    • Take ownership of the area of responsibility with special attention to the physical plant and overall appearance of the operation
  • Have a positive and professional attitude
  • Work with the Club Controller and General Manager regarding all HR functions for the department including payroll functions, bi-weekly payroll approvals, etc.
    • Consistently monitor payroll and labor resource allocations to ensure they are in line with financial goals 
  • Oversee and contribute to the development and implementation of member and catering events to energize member participation in these events
  • Oversee, collaborate, and execute all indoor and outdoor F&B events, activities, and functions
  • Be responsive to members’ requests for menu selections, event planning, etc., and strive to find creative ways to accommodate reasonable requests
  • Develop and monitor plans, budgets, and procedures to provide direction and controls for food and beverage operations; implement metrics and corrective procedures as necessary to help achieve excellence in member satisfaction and F&B operational goals
  • Ensure knowledge of and compliance with all current health, safety, liquor consumption, and all other food and beverage regulations
  • Be responsible for the management of all alcoholic beverage inventories and purchases
  • Other duties may be assigned

EDUCATIONAL AND CERTIFICATION QUALIFICATIONS

  • Preferably, a degree in Hospitality Management, or Culinary School, or Equivalent education and experience in Food & Beverage management with a Country Club, or high-level culinary facility
  • Certification as Food Protection Manager and TIPS required (or complete within the first 60 days)

PHYSICAL DEMANDS

  • Must be able to lift 25 pounds often and up to 50 pounds occasionally  
  • Stand, walk, and work in a variety of temperatures daily

WORK ENVIRONMENT

  • Must be available to workdays, nights, weekends, and holidays
  • Will work daily indoors and outdoors

3 to 5 years Club Managment as Food & Beverage Manager or Director

3 to 5 years of as Assistant Manager at high quality facility or equivilant experiance
